Okay, so admittedly nut butter cookies are not what first springs to mind when one is considering “healthy” foods. But hold on a minute. Are you caring for a child that is a little on the thin side? Or a frail, elderly relative with a sweet tooth? Or do you just want a ‘pick-me-up’? Then this recipe, which calls for protein rich nut butter, might just be the healthy boost you are looking for.
We made this recipe with hazelnut butter, but peanut butter would be just as delicious.
Ingredients:
½ cup butter
½ cup white sugar
½ cup firmly packed brown sugar
1 large egg, beaten
1 cup nut butter
1½ tsp vanilla essence
½ tsp salt
2 teaspoons bicarbonate of soda
3 cups plain flour
Method:
Pre-heat your fan-forced oven to 170o (or 190o for a regular oven)
Cream together the butter and sugars in a mix master. Continue to mix while adding the egg, nut butter, and vanilla essence. Mix well, then slowly add the dry ingredients and incorporate well.
Line your trays with baking paper. Using a tablespoon measure, place a tablespoon of cookie dough onto the tray, and continue this process until all the mixture is used. Press each ball of dough down with a fork. Cook for 10-15 minutes until cookies are browned at the edges.
