This tried-and-true dish presents a healthy twist on the traditional salmon mornay, with the addition of five vegetables, including cauliflower.
Ingredients:
• 1 medium onion, finely chopped
• 1 red capsicum, diced
• 1½ tbsps olive oil
• 2 tbspns plain flour
• Up to two cups of milk
• Salt and pepper to taste
• Two cups of grated cheese
• 1 tin of red salmon
• 1 tin of corn kernels
• 1 medium cauliflower
• 2 bunches of broccolini
Method:
To make the mornay, heat the oil in a medium sized saucepan. Add onion and capsicum and stir over a medium heat until softened. Add flour to make a roux. Add milk and stir to prevent flour lumps forming. When the mixture thickens, add salt and pepper and one cup of grated cheese. Stir until the cheese melts. Drain the salmon and the corn kernels well and add to the saucepan. Stir until combined and then remove the saucepan from the heat.
Steam the cauliflower and broccolini until just cooked. Drain well.
Place the cauliflower in a large rectangular baking dish. Pour the salmon mornay over the top. Place the broccolini on top of the mornay and sprinkle with the remaining cheese.
Place the baking dish in the oven at 200oC for twenty minutes before serving.
