Golden Syrup Dumplings (Serves 4)
Ingredients for the syrup
1 cup water
1/2 cup caster sugar
1 tbsp golden syrup
1 tbsp butter
Ingredients for the dumplings
1/2 cup Self Raising flour
1/2 tsp salt
1 cup Tandaco Suet mix
Up to ¼ cup cold water
Method
For the syrup: Boil all the ingredients in a medium size saucepan, stirring until the sugar has dissolved. Turn the syrup down to a low heat right before adding the dumplings.
For the dumplings: Sift the flour and salt together. Add the suet mix to the bowl. Using a dinner knife to stir add a little bit of water and stir it through. Continue adding water until the dough comes together into a loose ball. Lightly press the dough with all the bits and then wrap the dough in plastic wrap and put it into the fridge for 15 mins. Use a sharp knife to cut the dough into 8 pieces. Lightly shape the pieces into balls and gently drop them into the simmering syrup. Simmer gently for 15-20 mins until they are light and fluffy.
Serve with cream and ice-cream.
